Carrie and I have traveled through more than 20 Mexican states, tasting everything from street-side tacos at bus stations to full-on fine dining experiences.

And after all that?

Mexican food is still my favorite cuisine in the world.

We’re talking about traditional, locally grown corn. It goes through a fermentation process that makes it easy to digest and more nutritions.  Then the corn is grown into MASA, the base of  everything in Mexico and much of Latin America.

That masa can be shaped into many forms and works as a vessel to carry uncountable foods, with names like:

  • Tacos
  • Enchiladas
  • Sopes
  • Huaraches
  • Quesadillas
  • Tamales

Same base ingredient, completely different experiences depending on where you are.

This is what makes traveling through Mexico so exciting. You’re constantly discovering new expressions of the same simple roots.

Chilies: Flavor, Culture, and a Little Bit of Fire 🌶️

Chili is everywhere in Mexico.

Not just in savory food—but in fruit, drinks, candy… even ice cream.

And each chili tells a story.

For example:
A jalapeño, when ripened and smoked, becomes a chipotle. Same plant, totally different flavor.

Every region has its own approach to chilies, and every market is full of options—from mild and smoky to seriously intense.

One thing we always say:

You can tell how good a place is by the salsa alone.
